When I find a recipe we love, I often look to see what else my family might like by the same creators. That’s how I stumbled across The Modern Proper’s Lasagna soup. It is hearty, easy, and packs an insane amount of flavor! A huge winner in the eyes of my family of meat-eaters!
You cook the noodles separately and throw everything else in one pot. I always use my cast iron Dutch oven for all of my soups because it’s big and who makes a small amount of soup?! It’s done in 30 minutes and such a crowd pleaser! It’s also great to make and take to friends and family who may need a meal delivered because it can be frozen. Just leave out the noodles and cheese when freezing.




Things I tweak: The original recipe calls for fennel seeds and parsley, both of which I leave out. I often use minced garlic if I don’t have fresh. I also add a 3rd teaspoon of Italian seasoning (which is basically a tablespoon in total). If you’re dairy-free, top with a non-dairy cheese substitute. If you’re gluten-free, substitute with your favorite wheat-free noodles.
Ingredients (Adapted from The Modern Proper):
1 tbsp olive oil
1 lb ground Italian sausage
½ lb lean ground beef
1 onion, diced
6 cloves minced garlic (about 1 1/2 tbsp)
1 (28 oz) can crushed tomatoes
1 (6 oz) can tomato paste
1 (14 oz) can tomato sauce
4 cups chicken broth
1 tbsp Italian seasoning
½ tsp black pepper
2 tsp salt
8 lasagna noodles, cooked
8 oz Mozzarella, shredded
½ cup Parmesan cheese
Directions:
- In a large stock pot, heat 1 tablespoon of olive oil over medium high heat. Add the ground beef, sausage and onions and cook until meat is browned, about 8 minutes. Halfway through cooking the meat add the garlic.
- Once the meat is cooked through, pour in the tomato paste, canned tomatoes, tomato sauce, chicken broth, Italian seasoning, salt, & pepper and simmer on low for 20 minutes.
- While the soup is cooking, prepare the lasagna noodles in a separate pot according to package directions and drain.
- Add the cooked lasagna noodles to the pot and stir to combine. Top with the Parmesan and mozzarella cheeses.
